Bueller...

I promise I'm alive! I've been a bad blogger and I have so much to recap.
Project 366, Medford events and pictures, summer plans, the list goes on. I promise I'll get to it.
Stand by!

Happy Friday and happy first day of June!

Another Saturday, another list

Sorry I disappeared from the blog-o-sphere, but I'm still alive! Here's my usual Saturday list.

1. First off, today is April's PARTY DAY!
2. I got honey blonde highlights for summer yesterday and I love them! Ohh, and you know you're good friends with your stylist when you blow dry your own hair while she waxes your friend's eyebrows.

3. I'm trying to figure out what my plan is for summer. Work or classes? I can't decide so I will probably do both.

4. A word to the wise, slowly re-introduce meat and dairy back into your diet after 8 days of being vegan. Otherwise, you'll be the mayor of stomach ache city.

5. Speaking of Vegan week, I still need to recap it. I'm on it, I promise!

6. I'm rediculously excited to hang out with my niece and nephew tomorrow!

7. Speaking of the highlights, I didn't recognize myself in the mirror this morning.

8. Is it weird that I'm already thinking of names for my event planning company? And that I've pretty much made my decision on said name?

9. I'm so excited to see all of my friends tonight. It's been FAR too long since I've seen some of them.

10. I miss my sisters like crazy. Even though Middle Sister and BIL will be here in 2 weeks, I still want to come to California and see them and Mr. & Mrs. Wookie.

11. Oregon State won the Civil War series today. Tomorrow we go for the sweep!

That's all. I have to go get ready for the party and I hope I remember to take lots of pictures!

Happy Saturday!

Project 366, Week 20

May 13- May 19, 2012

May 13- Since it was gorgeous weather, I sat on my stoop with an ice cold Blue Moon. Delicious!

May 14- I have really kicked up my workouts so I'm on the Couch 2 5K wagon again. And yes, I did screenshot this while I was running.

May 15- The Sheriff came into town so we went to the baseball game. It was amazing weather and the view of those baseball boys was great too.

May 16- Have you eaten at Laughing Planet? Their food is not only delicious but they also have a ton of vegetarian and vegan options. Since I'm vegan this week, I got a burrito with tofu and no dairy. I could have gotten soy cheese, but that stuff is yick yack.

May 17- Check out my recommendations on Amazon. That's what happens when you buy a donut pan.

May 18- Autumn came up for the night and we made these baked donuts using said donut pan from Amazon. As you can probably tell, I filled the rings too full so there was no hole. The donuts and frosting are vegan and I got the recipe from the awesome vegan blog site, Peas and Thank You

May 19- Before she left, Autumn and I went to Cafe Yumm! I had never been there and that Yumm! sauce is to die for. Eating vegan there was easy because I simply ordered the "vegan deluxe" toppings.

Accountability and Vegan-ism

My friends are good at keeping me accountable. Even over Twitter.

Speaking of that, yesterday kicked off one week of going Vegan. I've done vegan before and I blogged about it, here. I also did a 2 week stretch last summer. Autumn and I are doing it together, this time!

Why am I going vegan, you ask? It's not for ethical reasons, purely health. Just like in exercise, it's good to shock your body with food since most weight loss comes from diet alone. Women my age are supposed to get around two servings (3-4oz) of red meat a week. The rest should be from lean, white proteins like chicken and fish. I don't eat a lot of meat in general considering I live by myself and it doesn't make sense to go buy giant portions of steak. I have found with weight loss, taking out dairy especially helps drop the pounds. And dairy products are where I struggle the most. I love me some Greek yogurt with honey.

I encourage everyone to try going vegan for a week. It makes me feel lighter and I have more energy since I'm not being bogged down with cheeses and meat. If you're going for weight loss purposes, make sure you're eating plenty of veggies and fruits. Yes, vegan bread is easy to find but won't exactly help you drop the weight.

I plan on documenting this week just like last time and will do a re-cap at the end of the week.

Happy Wednesday!

Project 366, Week 19

May 6- May 12, 2012

May 6- I set out to make just regular turkey meatballs but then decided to switch it up and make Mexican turkey meatballs. They were so good served with beans and salsa verde! I'll post the recipe if anybody wants it.

May 7- I had to drive to Eugene to pick up something (not crack cocaine, jewelry I ordered) and so I stopped by Springfield to get a Sonic happy hour! I go through withdrawals when I'm not in Medford.

May 8- Here is my jewelry I ordered! A cross necklace, pink stone ring, and a bedazzled jeweled headband. I love them all!

May 9- I made baked tortilla chips with just some corn tortillas I had. They're really good and fairly healthy, too!

May 10- I've been spending a ton of time out on my stoop in the gorgeous sunshine! I've also been trying to "tan" as well as pasty white people can.

May 11- I was ambitious and made pizza from scratch. This is only the second time I've attempted it but I made the dough and the sauce. It's covered in turkey sausage, turkey pepperoni, mushrooms and low fat mozz. I just finished the last piece today! Ohh, and don't mind my gross pan.

May 12- I walked to the mailbox with 17 invitations for April's birthday party and my voter's ballot! I was happy to get both accomplished!

Happy Mother's Day!

All of her children are grown, but my mom is spending Mother's Day with her two grandkids. Isn't that how it works for moms? Their jobs are never done. It never ceases to amaze me that my mom hasn't had a baby in 22 years, but she still knows what to do.

My mom is the strongest woman I know. It takes a certain type to be married to a man in law enforcement. She held down the fort during those many times where my dad was out of town, or when he got called out late at night. She never complained while "single mom"ing it. She always just did it because there was no other option. The same could be said about Military wives.

So, Happy Mother's Day to the woman who:

-supported all of her kids moving away to college, even though it was sad to watch them go.

-supported us by paying for our school!

-showed us girls a great example of what a strong, independent woman looks like.

-always had dinner on the table growing up. Even though we complained about having spaghetti and vegetable lasagna too much.

-never let us quit anything.

-stressed the importance of family and traditions.

-made sure my siblings and I got a long and were grateful to have each other.

-showed, in my opinion, the perfect balance of standing her ground and being able to stand by my dad's side.

-made it seem like a walk in the park to raise 4 kids. That's what I remember, anyway!

-was strict and showed us tough love. As usual, I hated it when I was young, but I'm so grateful for it now.

-joins us in out motor mouth-ness. Our house is never quiet.

Mom, thank you for showing me unconditional love. I know it's something I will never understand. Or until I have my own kids, that is. Thank you for setting such a great example of what a strong, independent and secure woman looks like. I'm so grateful for you and I thank God for giving me you.

 WE LOVE YOU!

Standard Saturday list

1. The weather has been so nice in Corvallis lately. And the 10 day forecast calls for more amazing weather! I've been spending time on my stoop "tanning".

2. I am knee deep in planning April's birthday party. Invitations were printed, envelopes address and stamped and were put in the mail today.

3. All of this party planning is making it hard to focus on school. It's week 7, so I have to FOCUS!

4. Pretty Woman is on right now. I've never seen it. (.......I'll wait for the shock to go away) But it was made the year I was born.

5. I watched A League Of Their Own last night and I love that movie. I played softball when they still wore shorts so I could have played in a skirt. These days, girls play in baseball pants. Wusses. You weren't cool until you got a giant raspberry on your ass.

6. I've started doing more running as cardio and I love it. I love running and the weight basically falls off.

7. As most of you know, my favorite ginger sister, Mrs. Wookie, is a MilBlogger. I want to enlist her help of finding out how to send care packages to troops. My friends and I want to do this!

8. Tomorrow is Mother's Day. And my mom will be without 3 of her 4 children. Sorry, Mom. I promise to do a post about you!

9. I voted today. I love that I grew up in a family where law enforcement was heavily influenced. It helps me make decisions on who to vote for.

10. After April's party I want to try and plan a baby shower. Sisters?
